If you browse the links under my poems, you'll see I link recipes a lot, and as I mentioned, some of my characters need high-calorie foods, of which I usually link the healthier kinds. Or hit the Recipe tag on my blog, I design a lot of recipes and they are rarely "lite" because I dislike tampered ingredients. A seasonally appropriate foodcookie recipe: "Pumpkin Spice Cookies."
>> Scrolling through some of my saved recipes and favorite sites, I'm finding a lot of things that flag themselves "healthy" just mean "low in calories." Which is great if you need to go that way. <<
Yeah, that's a problem. To find high-calorie foods or recipes, you have to know where to look; it's a smaller target but there are several clusters.
>> I'm trying to prep several things ahead and have them in the fridge, because if I have to cook for myself, I probably won't.<<
Watch for recipes you love that can be made in bulk and saved. There's a luscious pea soup recipe in the Elder Scrolls Cookbook that includes bits of carrot and bacon, and would probably store well. You can make or buy curry sauces and pour them over whatever you like, of which the korma tends to be highest in calories because it uses cream and/or nut butter as part of the base. Africa uses peanuts / peanut butter as a base. Gosh, now I'm thinking about African spice blends and wondering if you could just add peanut powder for an instant curry...
