Aged cheddar sounds good but I'm not really a big fan of smoked cheese. I think perhaps people smoke them a little too aggressively where a touch of smoke flavor would be nice.
And sure, I'm usually around in the evenings if you want to hit me up on Google Hangouts or whatever platform you use. I've been told Trillian isn't playing nice with Google anymore so I'm thinking of setting it up on both my desktop and tablet.
