Also, I have a suspicion you could culture a non-dairy buttermilk, though you'd have to get a special starter to make it vegan (vs. just using store-bought buttermilk as a starter). (This reminds me that I had meant to start making my own buttermilk apparently it's dead easy - I should totally start doing that!)
